Happy New Year

Well hello there WordPress!Β It has been way too long since I have posted anything on here!Β 

First off, I wanted to wish you all a Happy New Year!

I have been keeping myself busy for the past few months and have neglected to post anything on here but that will all be changing as of the New Year. I am working on the release of my first E-Book which will be dedicated to some of my favorite healthy desserts as well as an interactive website which will showcase my passion for all things healthy! I will post the link to the website which should go live in the next few weeks.Β 

As for fitness, I have been trying to get back into the workout routine lately and my husband and I have made the decision to stick with working out on a regular basis. I am not going to call this a New Year’s resolution…how cliche… but rather a new health commitment in our lives. The weather here in Chicago has been horrible as of lately, which makes getting to the gym that much harder but sometimes, we just have to stop making excuses and “just do it” !Β 

Although 2013 was a good year, I am looking forward to what 2014 will bring! I encourage you all to follow your dreams! get passionate about something you love and turn your dreams into reality!

What I’ve been up too lately…

Hey everyone!

So I know I have been MIA yet again! with the wedding being a little over 3 weeks away, I’ve been really busy running around! I have not had time to workout as much which I’m not too happy about but, I have been sticking to eating clean and making fresh juice from leafy green vegatables as well as fruit smoothies. When our bodies are fueled with optimum nutrition, not only do we have more energy, but we lose weight faster.

This past weekend, I had my bachelorette party which I had an absolute blast at! I had my bridesmaids and friends by my side and it felt nice to just take a break from all the crazy hecticness (is that even a word) in my life and enjoy the night.

Chickpea chocolate chip cookies (gluten/dairy free)

Hey everyone!!!

I hope everyone has been doing absolutely amazing!! With my wedding being 6 weeks away, I’ve been super busy prepping and planning for it.

I have been sick for the past week with a cold and have not been to the gym since last Monday (booooo!!!). I am trying to get back in the clean-eating routine and will probably head to the gym tomorrow if I feel better.

I wanted to share a delicious/clean recipe with you all!! These chocolate chip cookies are made using chickpeas…yes CHICKPEAS as the main ingredient!! I was pleasantly surprised at how yummy they turned out. Best part? They’re gluten and dairy free!! No artificial ingredients or chemical processing for this girl!! He he.

What you’ll need:

– 1 cup of chickpeas drained with the skin removed
– 1/3 cup peanut butter
– 1 tsp of gluten free baking powder
– 1/4 cup of sweetener of your choice, I chose maple syrup (grade b)
– 1/4 cup enjoy life brand chocolate chips
– 1 tsp vanilla extract

Directions:

– blend the chickpeas, peanut butter, sweetener, and baking powder until they form a batter like consistency

– fold in the chocolate chips

– roll into balls and press onto baking pan

– bake at 350 degrees for 15-20 minutes

Makes around 12 cookies.

You can even skip the baking powder and the baking step and eat it as cookie dough. Both are delish!!

The Color Run

Ok so I finally did my first 5k this morning-the Color Run…and I am already ready to do another one!

I went with a few of my friends and had an absolute blast! I almost ran the entire thing only stopping a couple of times to get hit with the color and to get some water. It was a beautiful day in the Chi today so we took advantage!

Joyce Chen Spiralizer

Hi friends!

I wanted to tell you guys about an awesome appliance I bought a couple of months ago called a spiralizer. This little guy will turn your vegetables into angel hair pasta-sized noodles.

It’s so easy to use and cleanup is an absolute breeze! I’ve already used it to make zucchini noodles (shown in picture) and have even used the “ribbon” option to make sweet potato chips!

It’s really helped me stay on track with my healthy lifestyle by helping me substitute healthy whole vegetables instead of carb-filled noodles.

Overnight oats…my newest obsession :-D

Hello friends!

I hope you all are marvelous today! I have been so crazy busy with work and wedding planning lately that I haven’t had a chance to post anything on here.

So I have been experimenting with a ton of healthy food recipes and I have come to this conclusion: Trying to come up with healthy alternatives to some of our favorite foods can be extremely challenging! I give props to a people who can create a healthy dish and STILL manage to make it taste…well…edible lol.

Sometimes, I like to get creative in the kitchen while other times, I just need to make a quick meal/treat and get on with my busy day. I love eating a big breakfast as much as the next person but trying to fit my morning workouts before work in the mornings, can leave me with barely any time to put makeup on let alone make a healthy/filling breakfast.

I kept hearing about overnight oats and how they are a great healthy breakfast idea to try. I always wanted to try them but just never got around to it. Well, this week I did and I don’t think I can picture my hectic mornings without them anymore! Best of all, it literally takes minutes to prepare and you can make them the night before and leave in the fridge until the next morning.

So what exactly are overnight oats? Simple. They’re basically rolled oats mixed with any liquid you like along with other toppings, put in a jar, and placed in the fridge overnight to soak and absorb all the flavors.

I wanted to share with you guys the way I make mine. They have saved me time, energy, and money.

I basically start by pouring 1/2 cup of oats in a small mason jar. I add about 1/3 cup of almond milk and then top it with the following: mashed banana, flax/chia seeds(1 tbs of each), maple syrup, shredded coconut, peanut butter, cinnamon, and fruit of your choice. The possibilities are endless with overnight oats but I like to always add some protein and fruit to mine.

Vegan Chocolate chip banana “blondies”

Hey everyone!!

I know, I know, I know…I need to stop with the baked goods! But I promise, this will probably be my last sweet recipe for a while because even though the ingredients are clean, it’s still high in calories which is a no no when you’re trying to lose weight. But I hope you all like this recipe….

What you’ll need:

– 1.5 cups of brown rice flour
– 2 large bananas mashed
– 1 tsp baking powder
– 1 tsp vanilla extract
– 1/4 tsp sea salt
– 1 tbs coconut oil
– 1/4 cup water
– 1/3 cup of chocolate chips

Directions:

1. Start by sifting the flour, baking powder, and salt together and set aside.

2. Mash bananas, add vanilla and coconut oil and mix well.

3. Pour banana mixture into the flour and mix well. Add the chocolate chips.

4. Spread batter into brownie pan and bake at 350 degrees for 40 minutes.

Enjoy, and try not to eat entire thing in one sitting :-p

Vegan “clean” chocolate cupcakes

Hi everyone!

I wanted to share a quick, healthy recipe for chocolate cupcakes incase you were craving something sweet without the guilt.

What you’ll need:

– 1.5 cups of rice flour (you can use whatever kind of flour you desire)

– 1/4 cup of raw cacao powder

– 1 tsp baking soda

– 1/3 cup of maple syrup (or any other low glycemic sweetener of your choice)

– 1 tsp vanilla extract

– 1 cup water

– 4 tbs coconut oil

– 1/4 tsp salt (optional)

– 1/3 cup of chocolate chips (I used the Enjoy Life brand since they are dairy, soy, and nut free)

– some shredded coconut for topping if desired

Directions

1. Start by sifting the flour, baking soda, and cacao powder together.

2. Add in the maple syrup, vanilla, coconut oil, water, and salt stirring well until smooth. If mixture is clumpy, feel free to add a little bit more water.

3. Mix in the chocolate chips and pour into cupcake pan. ( you can add whatever topping you desire at this time, I tried one with shredded coconut)

4. Bake at 325 degrees for 45 minutes

Yields about 6 cupcakes each roughly around 220 calories
